Black-eyed Pea, Corn and Roasted Pepper Burrito Bowl (NOT-chos)
Warning, there are no chips, or cheese, but we like NOT-chos enough to eat them once a week. The richness of the avocado, the earthy black-eyed peas, and the spicy-sweet char on the peppers scratch the nacho itch without the uh-oh after. After the recipe are some thoughts on how to eat healthy, without giving up the tastes you love.
Yield: 2 servings/5 smart points per serving
3. Roast at 400° for 30 minutes. Remove from oven and scrape pan with spatula to free any charred on peppers. Set aside.
4. Bring small pan of water to boil and add corn. Cook according to directions, or let pot return to boil, then take off heat and drain. I use the super sweet HEB brand, and I think shortening the cooking time preserves the corn flavor.
5. Dump can of beans in a sauce pan and cook for 5-10 minutes over high heat until most of the liquid is boiled off.
6. Divide peas, corn, roasted peppers and avocado between bowls. Top with greek yogurt, and serve.

Figure out how to make your food taste good, be filling, and still be low enough in calories/points to meet your weight loss goals. Most of us who wind up in the overweight/obese crowd arrive here because we love delicious food, and a lot of it. There's no shame in that! Evolution favors people who know how to take advantage of available calories. We need strategies on dealing with a calorie-rich environment.

I'll just eat that chicken breast, and this steamed broccoli, and if I do this for long enough, I'll be healthy. Technically true, but that doesn't work when you love food. You're going to hit that drive thru on the way home, or order something to be delivered home.
This NOT-chos recipe evolved from an old friends Black-eyed Pea Nacho recipe. Tortilla chips, smothered in fresh grated cheddar, broiled until blistered and a little blackened, then topped with boiled black-eyed peas, diced white onion, and piles of diced avocado and sour cream. So good, but not conducive to losing weight, or doing anything productive for the remainder of the day. I subbed corn for the chips, same flavor, some crunch, low calorie. Fat free greek yogurt takes the place of sour cream, and the roasted peppers provide a sweet heat that keeps this dish interesting. This meal is filling, tastes AWESOME, and is pretty low calorie/smart points.
